Mimic Mondays for the Holidays: Cauli-mashed potatoes

Now, admittedly, I hate the way that these taste…BUT if you want a healthier alternative to mashed potatoes, then try these….I mean, realistically, there’s just nothing like mashed potatoes made from scratch…


Cauli-“Mashed Potatoes”

Ingredients (serves 4):

  • One whole head of cauliflower, cut into smaller pieces
  • 3 tbsp milk
  • 1 tbsp butter
  • 2 tbsp sour cream
  • Salt/chives/pepper to your liking


  • Cook the cauliflower in water for about 25 minutes until soft and able to be mashed with a fork
  • Drain the cauliflower and put in a mixing bowl
  • Add milk, butter, and sour cream.
  • Mash the mixture to your desired thickness
  • Noms
